2 cups sushi rice3 dried or fresh shiitake mushrooms2 carrots, diced1 onion, diced2 cups cabbage, finely chopped1 green onion, chopped1⁄2 cup corn1⁄2 inch ginger, minced2 tablespoons soy sauce2 tablespoons mirin2 teaspoons salt1 teaspoon furikake

Wash sushi rice in a large bowl. Repeat 3-4 times. Let the rice soak for 30 minutes. Keep aside.If using dried shiitake mushrooms, soak in water for 15 minutes. Keep aside.In a large pot, heat some oil. Fry the onions until caramelized. Add the rest of the vegetables and cook until softened.
