Vegetarian Takikomi Gohan
Ingredients

2 cups sushi rice

3 dried or fresh shiitake mushrooms

2 carrots, diced

1 onion, diced

2 cups cabbage, finely chopped

1 green onion, chopped

1⁄2 cup corn

1⁄2 inch ginger, minced

2 tablespoons soy sauce

2 tablespoons mirin
-
2 teaspoons salt
-
1 teaspoon furikake
Directions

Wash sushi rice in a large bowl. Repeat 3-4 times. Let the rice soak for 30 minutes. Keep aside.

If using dried shiitake mushrooms, soak in water for 15 minutes. Keep aside.

In a large pot, heat some oil. Fry the onions until caramelized. Add the rest of the vegetables and cook until softened.

Add soy sauce, mirin, soaked rice, salt and mushrooms. Add water or veggie broth.

Simmer until rice is cooked. Add more water if necessary.

Garnish with furikake on top.

Pack into onigiri molds and serve as a snack or as a side dish.
