Vegetarian Takikomi Gohan

Ingredients

  • 2 cups sushi rice
  • 3 dried or fresh shiitake mushrooms
  • 2 carrots, diced
  • 1 onion, diced
  • 2 cups cabbage, finely chopped
  • 1 green onion, chopped
  • 12 cup corn
  • 12 inch ginger, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 2 teaspoons salt
  • 1 teaspoon furikake

Directions

  • Wash sushi rice in a large bowl. Repeat 3-4 times. Let the rice soak for 30 minutes. Keep aside.
  • If using dried shiitake mushrooms, soak in water for 15 minutes. Keep aside.
  • In a large pot, heat some oil. Fry the onions until caramelized. Add the rest of the vegetables and cook until softened.
  • Add soy sauce, mirin, soaked rice, salt and mushrooms. Add water or veggie broth.
  • Simmer until rice is cooked. Add more water if necessary.
  • Garnish with furikake on top.
  • Pack into onigiri molds and serve as a snack or as a side dish.
