Baked Sunchokes
Ingredients

2 sunchoke clusters

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon dried rosemary

1 teaspoon black pepper

1 tablespoon curry powder (optional)
Directions

Preheat oven to 350˚F/180˚C.

Wash, scrub, and dry the sunchokes. Cut into 1⁄2 inch slices.

Spread on an oiled baking dish.

Add salt, pepper and rosemary. Mix well.

Bake in a preheated oven for 40–45 minutes, until the top has nicely browned.

Mix in the curry powder if desired, and cook for 2-3 more minutes.
