Baked Sunchokes

Ingredients

  • 2 sunchoke clusters
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon dried rosemary
  • 1 teaspoon black pepper
  • 1 tablespoon curry powder (optional)

Directions

  • Preheat oven to 350˚F/180˚C.
  • Wash, scrub, and dry the sunchokes. Cut into 12 inch slices.
  • Spread on an oiled baking dish.
  • Add salt, pepper and rosemary. Mix well.
  • Bake in a preheated oven for 40–45 minutes, until the top has nicely browned.
  • Mix in the curry powder if desired, and cook for 2-3 more minutes.
