Berries Sheet Pancake

Ingredients

  • 1 cup all purpose flour
  • 2 tablespoons brown or white sugar
  • 1 egg
  • 12 tablespoon baking powder
  • 18 teaspoon salt
  • 34 cup whole milk
  • 2 tablespoons butter, melted
  • 4 strawberries, sliced
  • 12-15 blueberries
  • 12 tablespoon dark chocolate chips
  • 1 tablespoon pecan or walnut pieces
  • softened butter (for serving)
  • maple syrup (for serving)

Directions

  • Preheat oven to 425˚F.
  • In a square glass baking dish (will use the same dish for baking), melt the butter in the oven.
  • Whisk together the dry ingredients flour, brown sugar, salt, and baking powder.
  • In a separate bowl, whisk in eggs, milk and melted butter until combined.
  • Add the wet ingredients to the dry ingredients and lightly mix (do not over mix)
  • Fold in some of the dark chocolate chips and nuts.
  • Pour the batter into oiled/ buttered glass dish.
  • spread the sliced strawberries, blueberries, nuts, and the chocolate chips on top. Lightly push then into the batter.
  • Bake for 18-20 minutes until toothpick comes out clean.
  • Remove from oven, slice and serve warm with butter and maple syrup.
  • Store leftovers, let cool to room temperature. Refrigerate if storing for longer. Warm for 10 seconds in the microwave or in the oven for 10 minutes at 350˚F.
