Bhapa Doi

Ingredients

  • 1 12 cup Greek Yogurt (can use vanilla flavored)
  • 1 cup milk
  • 1 (14oz) can condensed milk
  • 1 teaspoon cardamom powder
  • 2 tablespoons chopped pistachios
  • 5-6 strands saffron
  • 5-10 raisins

Directions

  • Preheat oven to 355˚F/180˚C.
  • In a large pan whisk or blend greek yogurt and condensed milk together with an electric hand blender until it reaches a smooth consistency.
  • Add milk slowly and whisk again to mix well.
  • Add cardamom powder and handful of raisins and mix well.
  • Pour in the mix in a large square baking tray or in multiple small ramekins.
  • Place the tray or the ramekins in a larger glass baking tray. Pour water in the larger baking tray so the ramekins are half immersed.
  • Bake for 45 mins or until a toothpick inserted comes out clean.
  • Take out the tray and let it cool. Garnish with chopped pistachios and saffron strands.
  • Refrigerate the Bhapa Doi for a few hours and serve chilled.
