Creamy Pasta With Mushrooms and Leeks
Ingredients

1 tablespoon olive oil

1 medium sized onion, chopped

1 leek, thinly sliced

1 cup mushrooms, sliced

1⁄4 cup parmesan cheese, grated

4 teaspoons salt or to taste

2 teaspoons black pepper
-
1 teaspoon crushed red pepper
-
3⁄4 cup heavy cream
-
3 cups veggie stock
-
1⁄2 pound whole wheat pasta
Directions

In a large pot, heat the olive oil.

Add the onions, leeks and mushroom, and cooks until onions turn translucent.

In a separate pan, boil the pasta until al dente.

Add the crushed red pepper, heavy cream, salt and pasta.

Reduce the heat to low and cook until the pasta is tender and the sauce thickens, stirring to prevent sticking to the bottom of the pan.

Mix in the cheese; season with freshly ground black pepper.

Serve the pasta with extra cheese sprinkled on top.
