1 tablespoon olive oil1 medium sized onion, chopped1 leek, thinly sliced1 cup mushrooms, sliced1⁄4 cup parmesan cheese, grated4 teaspoons salt or to taste2 teaspoons black pepper1 teaspoon crushed red pepper3⁄4 cup heavy cream3 cups veggie stock1⁄2 pound whole wheat pasta

In a large pot, heat the olive oil.Add the onions, leeks and mushroom, and cooks until onions turn translucent.In a separate pan, boil the pasta until al dente.Add the crushed red pepper, heavy cream, salt and pasta.
