Creamy Pasta With Mushrooms and Leeks

Ingredients

  • 1 tablespoon olive oil
  • 1 medium sized onion, chopped
  • 1 leek, thinly sliced
  • 1 cup mushrooms, sliced
  • 14 cup parmesan cheese, grated
  • 4 teaspoons salt or to taste
  • 2 teaspoons black pepper
  • 1 teaspoon crushed red pepper
  • 34 cup heavy cream
  • 3 cups veggie stock
  • 12 pound whole wheat pasta

Directions

  • In a large pot, heat the olive oil.
  • Add the onions, leeks and mushroom, and cooks until onions turn translucent.
  • In a separate pan, boil the pasta until al dente.
  • Add the crushed red pepper, heavy cream, salt and pasta.
  • Reduce the heat to low and cook until the pasta is tender and the sauce thickens, stirring to prevent sticking to the bottom of the pan.
  • Mix in the cheese; season with freshly ground black pepper.
  • Serve the pasta with extra cheese sprinkled on top.
