Guacamole
Guacamole works well with crackers, tortilla chips or on toast.
Ingredients

4 medium avocados, ripe

1⁄2 small onion

2 tomatoes
-
1 jalapeno pepper
-
1⁄2 inch piece of ginger

1 lime
-
1 tablespoon olive oil

1 teaspoon salt or to taste

2 teaspoons black pepper or to taste
Directions

Slice the avocados in half, remove the pit and skin, and place in a mixing bowl. Mash the avocado with a fork.

Dice the onion, tomatoes, jalapeno pepper, ginger and add to the mashed avocados.

Stir in olive oil for a smoother consistency.

Add salt, pepper and juice from a freshly squeezed lime.
