Guacamole

Guacamole works well with crackers, tortilla chips or on toast.

Ingredients

  • 4 medium avocados, ripe
  • 12 small onion
  • 2 tomatoes
  • 1 jalapeno pepper
  • 12 inch piece of ginger
  • 1 lime
  • 1 tablespoon olive oil
  • 1 teaspoon salt or to taste
  • 2 teaspoons black pepper or to taste

Directions

  • Slice the avocados in half, remove the pit and skin, and place in a mixing bowl. Mash the avocado with a fork.
  • Dice the onion, tomatoes, jalapeno pepper, ginger and add to the mashed avocados.
  • Stir in olive oil for a smoother consistency.
  • Add salt, pepper and juice from a freshly squeezed lime.
